These Banana Oatmeal Cookies are hands down the very best banana flavored cookie I've ever had. Not only are they really moist and chewy for times, but they're unmistakably banana-y.

Banana can be one of these flavors that can get lost when you inhale with this. It can be really subtle flavor. It always bums me out when that occurs, cause I LOVE the taste of banana. And thus does the hubs.

When good flavored banana treats come along, we move a little mad for them.

These cookies make the list of banana things to go crazy for. Without a doubt.

And they're so moist, they almost melt in your mouth. In addition, using both banana and oats inside them, they are basically healthy, correct? And perfect for breakfast!

Making them is equally as simple as eating them.

You have the usual suspects -- butter, brown sugar, white sugar, an egg, vanilla and mashed bananas. You start by mixing all those beautiful components together.

I have to warn you. The smell of that mixture -- with all the banana -- is intoxicating. The hubs was at the kitchen creating the dough together with me (we made a deal that included him with me) and we both had to work hard to not put our faces, or even a straw, right in to it.

Then you add all of the ingredients (which usually means you simply use one bowl yay!) And combine it all together!

To bake themspoon about a tablespoon of bread and create a thick disc, as opposed to a chunk. They spread a bit after baking, and thus don't place them too close together. Bake them for approximately 10-12 minutes to get a nice, moist cookie. So yummy!

1 other thing I love about this recipe is really where it came out.

My grandma (my father's mother ) passed out in 2008. Once I started baking a lot a couple of years ago, my uncle gave me cookbook he'd had and didn't use. I've had it in my list to produce numerous her desserts ever since.

My dad and I made her gaufrettes (a French cookie -- my grandparents were French) a year or so past. It was a convention for my grandmother to make them every Christmas! She gave everyone a large tin of these, which was really an effort with 6 sons.

I know precisely how much of an effort it had been! My goodness. She made them with a traditional gaufrette iron that goes over an open flame. My father and I had them in the stove. They cook very quickly and you have to be precise. Too long and they sort of disintegrated into iron. Too long and they burned into the iron and we had to scrub it out.

My dad was massaging the batter and taking away the cookies, I had been working the ironthe hubs was timing things. It required a number of tries to get it , but they were so great! I have tried to make them again on my own and it never works. I would love to share the recipe, however, the dang irons are so hard to discover. And pricey. At some point, I'd love to just make a cookie cutter with the identical gaufrette taste.

For today though, I am sharing these cookies. I really don't believe I ever had them when she made thembut they're from her novel.

It is such a fun recipe book to check through, also. There are many handwritten pages, including clippings and newspaper click this link recipes that were taped into the book. I love the way that they used to compose recipes at the newspaper -- they'd the person who filed it's title and cute little stories. It's so fun to browse ! What another time on earth!

Anyways, I don't know where this recipe originated from. The paper appears like it had been on a flier from their square dance band or something (they have been big to square dancing). It is definitely from West Virginia, in which they dwelt.



In any event, I'm so happy to finally share a recipe from her novel with you! I made a couple of adjustments to make them thicker and puffier and they are delicious. There'll be more to come out of her recipe book, but for now enjoy the banana.

Banana Oatmeal Cookies



Yield: 34-36 COOKIES


INGREDIENTS:



1 cup brown sugarpacked

1/2 cup sugar

1 egg

1 tsp vanilla extract

1 cup mashed bananas

1 1/2 cups all purpose flour

1 1/2 tsp cinnamon

1 tsp baking soda

1/4 tsp ground cloves

2 tsp cornstarch

3 cups old fashioned oats

DIRECTIONS:

1. Mix together butter, brown sugar, sugar, egg, vanilla extract and mashed bananas until well combined.

2. Add flour, cinnamon, baking soda, cloves and cornstarch and blend until blended.

3. Stir in vanilla.

4. Preheat oven to 350 degrees.

5. Flatten dough a little bit, into thick disks. They'll spread a little when boiled.

7. Remove from oven and cool on cookie sheet for 3-4 minutes, then proceed into cooling rack to complete cooling.
